OK, so I've had several requests for my burger recipe, so in the spirit of community service to all meat-eaters, here you go:
Ingredients:
- 1lb hamburger meat * (I'll use lower fat content meat, chuck or sirloin, which works because the chorizo adds plenty of fat)
- 4 oz chorizo (usually comes in 4 oz tubes)
- 4 pieces of bacon
- Tblsp fresh minced garlic
- Tsp Cumin
- 1/4 small finely diced onion (save the other half for topping)
- 1/4 Chipotle pepper, crushed
- 1 med Jalapeño pepper, finely diced
- tsp salt
- tsp pepper
- Cheese (American works, pepperjack or smoked gouda is better)
- Buns (get the good ones, if your going through all this trouble for a burger, might as well put it in a nice brioche bun)
Directions:
- Heat 2 Tbsp olive oil in a non-stick pan, drop in in the garlic, onion, spices, and sauté for approx 2 mins, then drop in the minced Jalapeño, and sauté for about 30 more seconds.
- Drain, and mix with the hamburger & chorizo, then pop them on the grill. (Because of the chorizo, you'll want to cook these at least med well, but don't worry cuz they'll be plenty juicy.)
- About 1/2 way through the cook, put the bacon on the grill, and cook to your preference. Remove and set aside.
- When the burgers are almost done, break the bacon in half, put on the burgers, and put the cheese on top.
- Wait a few minutes, then put the buns on the grill (if you have a top rack, it works great to toast your buns. If not, either put the buns on a cool spot, or watch them close, it doesn't take long)
- Take those babies off, load them up with your fav toppings, and dive in you carnivore.
* Depending on the size burger you prefer this makes about 3-4 burgers. If you add hamburger meat, increase the other ingredients accordingly.
